What is green tripe?

Green tripe is the unbleached stomach lining of a grazing animal, dried whole. “Green” does not mean the color — it means unprocessed. The white tripe sold for people has been cleaned and bleached; this has not, which is why it keeps its texture and its flavor.

How strong is the smell, honestly?

None from the stick. Raw green tripe is famously pungent, and that reputation follows the word; our sticks are dried low and slow and air-checked before packing, so the finished stick is odor free — in the bag, in a drawer, while the dog chews and afterwards.
