Air-Dried or Oven-Dried: Two Lamb Chews, Two Dryers

Lamb collagen is slow oven-dried and lamb tripe is slowly air-dried, and both panels print it: the dryer is matched to the chew, not to a grade. One sets a braid firm. One leaves a lining alone.

Guides that sort drying methods tend to sort them as a ladder — air-dried near the top, heat somewhere underneath. That ladder is written one chew at a time. Two chews from the same animal took two different routes, on purpose. That is the part no ladder explains.

What the two panels actually say

Both phrases sit in the spec block. A lamb collagen bag reads slow oven-dried into a light twist. A lamb tripe bag reads slowly air-dried to keep its natural enzymes. Both lines sit inside Ingredients and Guaranteed Analysis, one row above the protein and moisture figures. That is the block that carries the numbers, not the pitch.

Placement is the argument for taking the wording literally. A phrase in a headline is a phrase. The same phrase printed in the spec block of all four lamb products — 6-inch and 12-inch, both lines — is a process statement. Neither line borrows the other's wording. Neither sentence is doing decorative work.

The ten-count variety pack holds both chews and names neither method on its own panel. It lists the two ingredients and leaves the processes to the chews inside. Read that as a container doing a container's job. The method belongs to the product, and each product still carries its own.

Two tissues arrive with two different jobs

One tissue needs setting. A collagen chew starts as a sheet of skin, and the layer it is cut from is mostly collagen: the reference histology calls it the principal component of the dermis. Dense bundles, in the deep layer, forming the bulk of it. The layer being braided is the corium — the sheet under the wool — and it reaches the dryer as a strip, not a rod. Strips do not hold a shape on their own.

Green tripe skips a step. The FAO's own processing guidance for tripe destined for people says the dark internal linings must be removed by cooking, at 62 to 65 degrees Celsius. Unbleached green tripe never takes that step. Nobody cleaned it the way white tripe is cleaned. Nobody bleached it. That is the whole of it, and what green actually means is the shorter version of this paragraph.

So the two chews reach the dryer wanting opposite things. The braid needs locking into the shape it was just given. The lining needs leaving alone. One dryer does not do both jobs well — that is why there are two.

The table sorts dryers, not quality. Neither method is a grade. No row is promising a chew time, because nobody has published one for either lamb line, ours included. The last row is the one to act on.

The only place both methods land in one bag is the ten-count lamb variety pack. Five oven-dried collagen twists, five air-dried tripe twists, and the same dog to settle it. Which of the two your dog wants is a texture and aroma question. The dryer does not decide it.

Slow oven-dried, and how far that phrase goes

Slow oven-dried into a light twist is the printed method, and it is the whole of it. The braid goes into the dryer and comes out holding the shape it was braided into. The panel does not say why. A slow run is the usual reason a braid sets rather than slumps, but that is our reading of it, not a line off the bag.

The 6-inch lamb collagen sticks come out of the dryer as exactly that: a braid that holds, at a published moisture ceiling of 14% maximum. Nothing was added to make it hold. One ingredient goes in, never coated and never treated, and the same one comes out.

The stick is odor free. A lamb collagen twist carries no smell into a room. That is a fact about the chew rather than a credit to the dryer, and the odor-free chews in this range have a page of their own.

No temperature and no run time is published for either lamb line, ours included. Low and slow is as far as the panel goes. It is also the ceiling of what we will say. Anything more precise would be invented.

Why the tripe lining is left alone

The other needs leaving. Green tripe's whole proposition is that nothing was done to it. Never bleached, never coated, never treated, and dried whole. A slow air-dry carries that decision through to the last step of the line. The water leaves at its own pace. The lining is not asked to become anything else.

What comes out is the softest chew we make, and it carries the aroma. The 6-inch lamb tripe sticks are the ones a picky dog turns up for. Both of those are what the air-dry preserved — not what it produced. The aroma was in the lining before any dryer touched it. Keeping it there is the reason to buy green tripe at all.

The panel puts it as slowly air-dried to keep its natural enzymes. That is the store's own wording. What is still alive in a dried stick is a separate question, with its own page and its own evidence. This page stops at the method that was chosen.

What a moisture ceiling tells you, and what it does not

A maximum is a ceiling. The collagen panel prints 14% moisture maximum. The tripe panel prints 12%. The ten-count pack prints 15% — one ceiling there has to cover both chews. None of the three is a measurement of the stick in your hand. Each is the highest figure the product is allowed to reach.

So a lower ceiling is not a better chew. It is not evidence that one dryer worked harder either. Speed and endpoint are separate things: the ceiling says where the drying stopped, not how fast it got there. Both lines are dried to a published ceiling, and both carry the same 36-month shelf life.

Water content is where this page stops, and one lining at two water contents picks it up. The method is the question here. The number on the panel is only the endpoint it was driven to.

What neither dryer does, and what covers it

Drying is not a kill step. Taking the water out denies bacteria the free water they need to multiply. That is what makes a dried chew shelf stable. It does not kill what was already there. A 2023 review in the Journal of Food Protection records some foodborne pathogens persisting in low-moisture foods for months to years.

That holds for every dried animal product on every shelf, oven-dried and air-dried alike. Which is why FDA's own handling advice is the same one for all of them. Twenty seconds at least, soap and hot water, before and after. A cool dry place under eighty degrees for the bag.
