How a Bully Stick Is Made, Step by Step
A bully stick is made by cleaning a single beef pizzle, stretching it straight, and drying it until the water is gone. That is the entire recipe. What decides the stick your dog actually gets is the drying — how hot, how long, how far it went.
You're in the kitchen holding a rod of dried beef your dog would trade a limb for, and the bag says almost nothing about how it got that way. Here's the whole route, and then how to read the stick in your hand.
Where a bully stick starts
It begins as one part of one animal, in a plant already processing beef for people. The part is the pizzle — the bull penis, said plainly once so you never have to wonder again. Route it to pet food and federal language has a name for it: an uninspected, inedible product. That sounds like a verdict. It isn't one. Nothing becomes a dog chew by accident.
The rule is short. A USDA-inspected plant may make pet food in the same rooms as human food, provided it doesn't adulterate it, and the federal rule keeps the two distinguishable. Which plant, and which country, your bag mostly can't tell you — that has its own label test.
Cleaning and shaping happen while it still bends
Everything but the fibrous core comes off first: a rinse, then the fat and loose tissue that would never have survived a dryer. What's left is what your dog works on an hour later.
Then it's stretched straight, and it has to happen now, while the tissue still bends. Any stick in the bag proves it — one that dried with a curve kept the curve. What that tissue is, and why it takes your dog so long, is what a bully stick is.
Thickness isn't a setting. It arrives with the animal, so a maker sorts for it rather than choosing it. From here the only dials anyone turns are heat and time.
Drying is the step that decides everything
Water is the whole job, and the target isn't dry to the touch. It's water activity — the share of the moisture still free enough for bacteria to use. That's why a stick can feel bone dry in your hand and still sit above the line.
Wisconsin's food science department publishes the critical limits processors work to: a dried beef product at pH 5.8 or lower is shelf stable at a water activity of 0.85 or below. Read the footnote, though. Those limits cover fully cooked, ready-to-eat human food — jerky, beef strips, pemmican. No dog chew is on the list.
Speed is the other dial. Push the heat and the outside hardens before the middle has given up its water, leaving a shell over a damper core. Go slow and the moisture leaves evenly. Slow isn't a marketing word here.
Air-dried, oven-dried and smoked leave different sticks
Three methods do nearly all of it. Each leaves a different stick in your dog's bag.

Hardness and how long a chew lasts don't track the method. They track how far the water went, and how evenly. A slow oven and a warm drying room can land in the same place. Rush either and your dog is through the shell early.
So: tendencies, not laws, and no bag has to name which one it took. Ours sit in the middle row — 6-inch bully sticks are slow oven-dried, one ingredient, no coating and no smoke.
The step after drying that leaves no mark
Some chews get one more treatment after the dryer, and neither you nor your dog can tell. Irradiation is legal for pet chews in the United States, by name. The animal-feed rule lists animal treats and chews among products that may be irradiated for microbial control, at a dose capped at 50 kiloGrays.
That rule caps the dose and sets no duty to tell you. So it isn't something to look for in the stick — it's a question for the seller, not your dog's nose.
Cut to length, sorted by thickness, bagged
Length is the last decision anyone makes, and it's made for your dog, not the pizzle: bites for the smallest mouths, then four inches, six and twelve. Thickness is a separate sort, so a dog who wrecks a standard six-inch moves up a grade rather than up the tape. The whole ladder sits under all bully sticks.
Then it's bagged dry and sealed. The point of taking the water out is keeping it out.
Reading the stick in your hand
Take one out in daylight, before your dog notices.
Color first. Pale straw to light brown suggests lower heat over a longer run. An even mid-brown right through suggests more heat. Near-black, smelling closer to barbecue than beef, says smoke.
Then the dry smell. A stick that smells of almost nothing left a dryer hot enough to drive the volatiles off. One that announces itself across the room didn't. Ours come out odor free, and what makes a chew odor free has the chemistry behind it.
Then bend it. A properly dried rod doesn't flex. If it gives, it's underdried — or thin enough that thickness is doing the flexing. Whether it should be meeting your dog's teeth at all is how hard is too hard. For a puppy on new teeth, let your vet settle that at the next checkup.
None of this is a certificate. It's a decent read off three free observations, and your dog will wait ninety seconds while you take them. What else to check before buying is in the four checks.
What no drying method removes
Drying controls growth; it doesn't sterilize. That 0.85 line denies bacteria the free water they need to multiply. It kills nothing already in the rod. Shelf-stable and sterile are different words, and we aren't going to blur them. Wash your hands after handling any chew.
Nor does it change what the stick is made of. No run time and no temperature turns beef into something else, and how digestible a pizzle is stays a question about the tissue, not the dryer. If your vet has your dog on a beef-free trial, no drying detail makes this one allowed — lamb collagen sticks are the same single-ingredient idea from another animal.
Every stick ends the same way, whichever route it took: short. Retire the rod at about three inches, or sooner if it would go into your dog's mouth whole, and swap it for a treat. Stay in the room while it's worked. If stools stay loose past a day, pause and ask your vet.

Are bully sticks cooked or raw?
Neither word fits cleanly. A bully stick is dried, and depending on the maker that happens with heat or close to room temperature. It isn't cooked the way a roast is, and it isn't raw the way a raw diet is. What your dog gets is beef with nearly all the water taken out.
How long does it take to make a bully stick?
It depends mostly on thickness and temperature. Water has to travel from the center of the rod to the surface before it can leave, so a jumbo takes far longer than a thin stick. Pull one early and it looks finished while carrying the moisture that would spoil it.
Are bully sticks bleached or chemically treated?
A real one has a single thing on its ingredient line: beef pizzle. Bleaching belongs to rawhide, which starts as a hide and has hair and layers to deal with first. A pizzle is one piece of tissue dried in the shape it already had — nothing to lighten, nothing to glue.
