What Is Inside a Lamb Trotter: Bone, Keratin and Fat
A lamb trotter is a dried sheep's foot, and most of what's inside it is bone: three pairs of phalanges, their sesamoids, and the end of the cannon bone. We don't sell them. Skin, tendon and fat make up the rest, and keratin turns up only when the hoof or the wool was left on.
You're holding something that looks like a chew and is built like a small skeleton. That shapes what any nutrition table can honestly tell you. This page opens the foot up, then goes looking for those numbers.
What is actually inside a lamb trotter
Sheep walk on two toes, and a trotter is both of them plus the joint above. Imaging work in BMC Veterinary Research, 2025, lists the hardware: the end of the cannon bone, three pairs of phalanges, and the proximal and distal sesamoid bones.
Wrapped around that: skin, tendon, ligament, cartilage and fat. The last bone in the chain is the distal phalanx, right out at the toe. That's the one your dog's back teeth reach last.
Every part of a foot is load-bearing hardware. It carried a sheep. A pig's foot and a goat's foot are the same plan in different bone, sorted out in the three-animal comparison.

Proportions are where this comes apart. A trotter isn't a recipe. Foot size, how much leg came with it, whether the hoof stayed on, how far it was dried — each one moves the numbers, and none is on the bag.
Bone is roughly two-thirds mineral
Bone contains collagen and mineral; it is not the same tissue as meat. The cited human-bone reference describes that composite. It does not establish the mineral percentage of a dried lamb foot, so do not use its human-bone figure as a nutrition measurement for this chew.
That fraction has a name on a label. Ash is the mineral line, and it is the one number that would tell you how much skeleton went in. Remember it.

The keratin question: hoof on or hoof off
Keratin is the material in hoof horn, claw and wool, and whether your trotter holds any depends on how it was dressed. Lamb trotters usually arrive with both gone: a vet-reviewed guide to the chew says they don't usually carry the hoof's outer keratin layer or the hair, which leaves skin, tendon, ligament and bone.
Usually is the word doing the work. Wool-on trotters are sold as their own line, fleece left on deliberately. Look at the toe end before you decide what you're holding.
Keratin is protein you can't spend. It resists common proteases such as pepsin and trypsin, the enzymes doing the work in your dog. Hoof and wool go in as protein and come out largely as hoof and wool.
Where the protein and fat actually sit
Take out the bone and any keratin, and what's left is skin, tendon and fat. Tendon and skin are collagen, which dries firm and gives slowly. That's the part your dog is working for, and it's a thin layer over a lot of skeleton.
The sources reviewed here do not establish a nutrition value for the particular lamb foot you are buying. USDA's FoodData Central search is one reference, not a registry of every manufacturer's analyses. Ask the seller for its own product declaration and the information your vet needs.
The pig entry is the nearest thing on record, and a different animal: 23.2 grams of protein and 12.6 grams of fat per 100 grams, raw. Ash comes in under a single gram. A sample with a skeleton in it could not land there. That's soft tissue.
Why the trotter nutrition tables cannot be sourced
The same figures circulate across trotter listings: crude protein near 70%, crude fat near 15%, moisture near 7%, and 2,000 to 2,500 kcal per kilogram. The vet-reviewed guide above prints all four, and it's the honest end of the category. It calls them averages, and its method page says where from: other manufacturers' labels.
So here is what a label in the United States has to carry. AAFCO's model rules make four guarantees mandatory: minimum crude protein and crude fat, maximum crude fiber and moisture. Crude names the analysis method, not the quality. That is how hoof and wool count as protein.
Which makes the circulating table an average of bounds. A minimum is a floor a seller will defend, not an instrument reading, and averaging floors doesn't make a measurement. Ash isn't one of the four either — the number that would show how much skeleton went in is the one nobody has to print.
The calorie line has its own opening: AAFCO says the figure may be calculated from proximate analysis rather than measured. So the numbers aren't wrong. They're unverified, which is a different charge. If you're counting calories for a dog on a weight plan, ask your vet to work from the label in your hand.
What you can check before you buy one
Four things are visible in the shop, all worth thirty seconds:
- Look at the toe end. Hoof horn on, or off?
- Look for wool. A fleecy trotter is deliberate, not dirty.
- Check whether the bag carries a guaranteed analysis at all.
- Check whether the seller says what was tested, or only prints a table.
None of that settles whether the chew suits your dog, which was never a composition question. A dried foot is a bone chew whatever the analysis says. Our own rule is a size, not a clock: at about three inches, or once what's left could go down whole, the treat jar opens instead. On a prescription diet, clear any new chew with your vet first.

Use the maker's guaranteed analysis for the actual product. Category averages from other labels are not a measurement of your chew, and a minimum or maximum guarantee is not its exact composition. The human-bone reference discussed above does not establish a mineral percentage for a dried lamb foot.
Do lamb trotters still have the hoof on them?
Usually not the outer horn. A vet-reviewed guide to the chew says lamb trotters don't usually carry the hoof's keratin layer or the hair, leaving skin, tendon, ligament and bone. Wool-on trotters are the exception, sold that way on purpose. Look at the toe end before you buy, because hoof and wool are both keratin, and keratin resists the enzymes that break down ordinary protein.
How many calories are in a lamb trotter?
Read the calorie statement for the actual lamb-foot product and its stated method. A category estimate does not establish that product's value; a calculated calorie declaration can still be useful for portion planning. If no usable value is available, ask the maker and discuss the choice with your vet.
